Traditionally this cheese is only made from unpasteurized milk, hence the name change, as this version is made from pasteurized cow’s milk. Layered with vegetable ash this classic cheese from France was originally made with the morning milking then layered with ash and then finished off with the afternoon milking. Deliciously tangy and aromatic.
